Tried and true!
Who doesn’t love a nice, iced cold cocktail? I know I do. But, stepping out to knock back a few drinks every night can eventually eat into your wallet. We all love the opportunity to cut back on spending our hard earned wages, so consider this: Why not skip the night out and opt for a quiet (or wild) night in with your best mates surrounded by some great food, delish drinks and your own kinda music? No one ever went wrong with a potluck, so ask your besties to whip up a dish each and you’ve got your food covered. As for drinks, if you’re tired of the usual spirit and shandy, but not up to any complicated concoctions, give the good ol’ mojito a go. This recipe has been tweaked for maximum impact – it’s pretty simple to make and is a crowd fave (or so I’ve witnessed!).
Here’s what you need to make a batch:
*Pitcher (or large jug)
*Mint leaves (available at your local grocery store or supermarket)
*1/3 cup Sugar Syrup
*Juice of 2 Limes (Lime essence works too, but the freshly squeezed fruit is always a win)
*Bottle of White Rum of your choice.
Here’s what you do:
1. Rinse the mint leaves and set aside.
2. Whip up a batch of sugar syrup.
3. Grab your pitcher and add ice at the base. Then, fill a quarter of the jug with soda, followed by a quarter of Sprite. Mix in the sugar syrup and mint leaves.
4. Pour in the lime juice and fill the rest of the pitcher with the Rum (approx. half a bottle).
5. Give it a good stir.
And you’re done! If you want it extra cold, pop it in the fridge for an hour and serve!
If you’re feeling adventurous add more rum and less soda.
If you choose to use more Sprite and less soda, balance the taste out by adding a reduced amount of sugar syrup (unless you want it super sweet!).
For a sweeter note, skip the soda and use only Sprite.
Fair warning: You won’t really taste the alcohol straight off. In fact, you will be tempted to add in more Rum (I typically throw in an entire bottle per pitcher.) But this concoction does creep up on you and a few drinks later you’ll wonder why you have trouble standing!
